Extra virgin olive oil is the most immediate way to taste Greece — a single spoonful carries a hillside of sea wind, the wild herbs between the trees, the grower's choice of harvest day and the miller's precision. It's the quiet foundation of the table, yet at its best it rewards the same attention as wine: aroma, structure, balance, origin.

One useful myth to drop: "acidity" isn't a taste — it's a lab number you can't detect on the tongue. And "extra virgin" isn't just low acidity; it must be fruity and free of defects on a tasting panel. What you'll actually judge in the glass is fruitiness, bitterness and a peppery pungency — all three are good things.

How to taste, in six moves

Warm the glass in your hand, cover it, and slow down. Green isn't automatically better than gold.

Warm
Pour a little into a glass, cover it, and cup the base to warm it toward ~28°C.

Smell
Uncover and inhale in short sniffs. Name the family first — green, ripe, herbal, nutty.

Sip
Take a small sip and spread it across the mouth; draw a little air through your teeth.

Sequence
Notice the order: fruitiness first, then bitterness on the tongue, then pepper in the throat.

Texture
Weigh body, persistence and balance — do the three attributes feel coherent?

Compare
Reset with water or apple, then taste the next. Preference is welcome; defects are not.
Bitterness and pepper aren't flaws. In a fresh oil they're positive attributes, strongest in early-harvest agourelaio. The peppery cough in the throat is texture, not sourness — welcome it.
Early harvest
Agourelaio — green, less oil per kilo, but vivid grass, tomato leaf, firm bitterness and a long peppery finish. A deliberate, costlier choice.
Later harvest
Riper fruit, higher yield, a rounder, gentler profile of ripe apple and nuts. Later isn't inferior — it's a different intention.
Pair it right
Delicate → fish, potatoes, desserts. Medium → salad, pulses, bread. Robust → grilled lamb, bitter greens, tomato stews.
Winter is when it actually happens

The Greek harvest runs roughly October to January — so a winter visit can catch the mill in full flow, the first cloudy oil straight off the separator, warm bread and a spoonful that tastes of the year just gathered. It's working-food-facility energy, not a staged show: confirm live milling directly, book ahead, and let the producer set the pace.

How to taste in winter

Pressing season (roughly Nov–Jan) is the moment to see a working mill in full flow; outside it, most mills still open for tours and tastings by appointment. Always book ahead — winter is quiet, personal and better for it — and confirm which format is running, since some premium tastings pause off-season.
