What it's actually like

Lailias is skiing at its most local — a small centre in the forest 27 km above Serres, where the clientele is beginners, school groups and Serres regulars keeping a modest tradition alive, with night skiing announced when snow and enthusiasm align. Nobody flies across Europe for this, and the centre's calendar follows the snowfall with complete honesty: thin winter, thin programme. Which is why the destination works best inverted — Serres is the base, a straightforwardly unglamorous city with one of northern Greece's most underrated food reputations, and the mountain is the excursion. A Saturday might mean a few forest runs, then descending for bougatsa done the Serres way and an unhurried evening among locals rather than tourists.

Plan around the lake, not the lifts. Kerkini, under an hour from Serres, is one of Europe's great winter birdwatching sites — Dalmatian pelicans in absurd numbers, flamingos, water buffalo steaming in the shallows — and a lakeside walk or boat trip there will outrank most Greek ski memories. The Alistrati cave and the Lion of Amphipolis each fill another half-day. As for Lailias: check it is operating before you drive up, full stop — the small centre's calendar is genuinely condition-dependent, and a wasted climb is entirely avoidable. Come between December and February for the best odds of pairing a white forest morning with pelicans by afternoon, and buy akanes — the local sweet — on the way out of town.
